Our Story
Authentic Neapolitan Pizza in the Heart of Texas
Founded by a family of first-generation Italian Americans, Cavalli Pizza takes pride in serving authentic Italian food and sharing the tradition of Neapolitan pizza making. We hand craft our 12-inch pizzas in accordance with the strict standards set by the Associazione Pizzaiuoli Napoletani.
The Dough

Starting with handmade dough that is leavened for 24–48 hours, our certified pizza makers hand toss (never roll) our dough on a marble slab to give it that thin, delicate center.
The Sauce

Our homemade sauce is made with San Marzano tomatoes imported from Italy, named for the region in which they're grown — only salt and pepper are added, with no preservatives.
The Cheese



Our hand-pulled fior di latte mozzarella is made in-house daily, alongside imported mozzarella di bufala for select pizzas.
The Oven

Our pizzas are cooked in a scorching 900-degree wood-fired oven for 90 seconds, which marks the pizza with the wonderful flame-blackened blisters along the crust and bottom that are the hallmark of a true Neapolitan pizza.
